Carnitas

 10 lb pork shoulder


 Sear the pork



 Sautee onions, peppers, and cumin.
 Sliced garlic

 Homemade masa for corn tortillas

 Flattening the tortillas
 Fry the tortillas in hot, dry pan until slightly browned.



 Repeat with the flour tortillas.
 Pico de Gallo

 Braise the pork for 6 hours in the oven.

 Taco with shredded pork, salsa, and crema.

    1. Thank you! As far as spices I used a mix of smoked spanish paprika, cumin, coriander, and salt and pepper. The liquid was a small amount of white wine and about a quart of chicken stock. Hope that helps!
